Over 50% of the menu is completely vegan, demonstrating that plant-based food is not only better for the environment but can also provide a top-tier culinary experience. Additionally, 27% of the menu is vegetarian, and ingredients are consciously selected to be local and seasonal when possible. Beurs van Berlage strives to minimise its ecological footprint while optimising the freshness and taste of its dishes.

By aligning deliveries with actual needs, reducing packaging, and optimally separating waste, environmental impact is minimised, and unnecessary emissions are limited. The venue’s kitchen is also completely gas-free.
